Spiced Chaas

~8g protein per batch (~3g per 1-cup glass)
Ingredients
Base
  • Plain yogurt (curd)1 cup
  • Chilled water2 cups
  • Roasted cumin powder½ tsp
  • Black salt (kala namak)½ tsp
  • Regular saltto taste
Aromatics
  • Mint leaves10–12
  • Fresh coriandersmall handful
  • Fresh ginger½ inch
  • Green chili, minced½ (adults)
Adult finish (optional)
  • Ghee½ tsp
  • Hing (asafoetida)1 pinch
  • Curry leaves5–6
  • Black pepper, ground1 pinch
  • Chaat masala¼ tsp
Method
1 Blend the chaas
  • Add mint leaves (10–12), coriander (small handful) and ginger (½ inch) to a blender
  • Add yogurt (¼ cup) and blend until completely smooth
  • Add the remaining yogurt (¾ cup) and chilled water (2 cups)
  • Add roasted cumin powder (½ tsp), black salt (½ tsp) and salt (to taste)
  • Blend or whisk until light and frothy
👶 Toddler — pour now, before chili and pepper
  • Pour her glass (½ cup) from the chaas
  • Optional: stir in hing (a tiny pinch) and serve chilled
2 Adult spicing
  • Stir green chili (½) and black pepper (1 pinch) into the remaining chaas
  • Heat ghee (½ tsp) in a small pan on low
  • Add hing (1 pinch) and curry leaves (5–6); sizzle 10 seconds
  • Pour the tempering over the chaas; add chaat masala (¼ tsp)
  • Chill 15 minutes or serve over ice
Tip Chaas separates as it sits — whisk again just before pouring.
